I do not think its a warped head they ar not ally heads check that your viscous fan operating properly also take the two hoses from matrix off and flush out matrix with clean water from a hose if matrix is blocked it'll slow down coolant flow hence causing over heating..

If a warped cylinder head's suspected attempt doing a compression test, if it is losing water it can be the water pump that is responsible

It's a Ford.
How many times should I spell it for you guys ?

Get it ?
On the other hand, if all the work was done PROPERLY, check your timming advance. You may run with an excessively retarded timming. that will bring it to the boil nicely and quickly.

Is the cooling fan cutting in.?
does it have enough water in it.?
is the water pump functioning.?
is the rad full of .?
do you have too much antifreeze in it.?
Have you tried engine flush.?
Do you have the correct pressure cap on the header tank? good luck

does the fan kick in?
does it do it in traffic? or whilst driving?
did you get the head skimmed and a compression test done on the block before fitting a new gasket?
80's fords love to get hot in traffic, that is a fact.
great car btw.
