Those gauges aren't the most correct, I'd not worry about it unless it drops down into the red.

yes the oil pressure is dictated by your rpm the faster the motor is reeving the greater the oil pressure. as the car warms up the oil gets thinner and the oil pressure decreases. its all normal, most gms stay above 20 lbs but like you where told before the guages aren't 100 %

a fluctuating oil pressure gauge typically indicates that you are low on oil.

Yes, inside allowable perimeters. A cold engine with good oil pressure will read high. As the oil heats up, it thins out, and so at idle, you'll notice the needle go down. it'll go back up when you're driving by engine speed
Now, if you're cruising down the road and it's bumping up and down you have either a flawed sender OR, you're low on oil and it's sucking air when the needle falls. Vehicles all differ on pressure plans. the same make and model will tend to differ for various reasons like oil viscosity, engine wear, pump clearances, etc.
I have seen Isuzu engines with five psi at idle scary and the maker says its ok. I recently built a 71 Mercedes 280 SL sportster and at idle cold, the needle buries itself at the peg reading 100psi at IDLE. and this IS okay. As it heats up, I still get 60 psi at idle. I only have 5500 miles on it although. I hope all that information gives you what you need.
In the case of your car, I could expect a healthy 60 75 PSI cold at idle and about 30 35 hot at idle. Cruising down the highway I could guess you get between 45 60

Oil pressure change with the engine rpms. The more RPMS the more oil pressure.
