I debated this same thing when I bought a Wrangler, as half doors are truer to the outdoors lifestyle and function of a modern day Wrangler plus it is more "fun" in warmer weather.
Full doors are a more practical choice, especially if you are at all worried about security when it is parked and warmth in colder climates. Pros and Cons below:
HALF DOORS
PROS
Great in Summer, and you really get the feel of relaxed driving as you do not feel closed in at all.
Feels and looks much cooler, and looks more "genuine" to the function of the open air feeling of the Wrangler as it was meant.
CONS
The plastic window is a ache to zip open and closed whenever you have to do also as being noisier than a full door.
I found myself either having the canvas/plastic window put in or, if I wanted to take pleasure in an open window, lift the whole thing out.
Not lots of room in the back, if you are also carrying luggage, to store the inserts.
Easier for a thief to break into the car with half doors, as they only have to unzip the window or cut the plastic though if you have got a soft top, they can unzip anywhere .
The plastic windows scratch easily, such that over time your view through the window can become obscured. Replacing them is costly, as I learned.
The canvas/plastic has zero insulation, so the cold comes straight through.
FULL DOORS
PROS
All of the CONS of half doors are overcome.
CONS
Feels more like you are in a normal car.
The height of the door to the window is quite high by comparison, so you feel more closed in.
Less fun in Summer.
I opted for the half doors, and it was great fun to drive around in Summer with most of my friends wanting to borrow it rather than be in their more conservative cars. In Winter, when I was in the cooler climates, it was a different story.
I also drove a friend's full door variant some times, and the difference was important it felt more constricted and did not look as cool, but was warmer in Winter and lots quieter.
Bottom line, is that a Wrangler is not a terribly practical car for everyday use such that I could loved to been able to pay for a second car, so as to just keep the Wrangler for Summer. It was such a fun car to drive and mess about in.
My next car after the Wrangler was a Land Rover finding, which has alike military origin except in the UK and Australia rather than the US . it is bigger, slower and a more basic car if that is possible but it is got more driving range and room for storage or passengers, also as being more stable, warmer and secure in all weather and terrain conditions than a Wrangler.

I had a Jeep Wrangler with half doors for two years in Australia, driving in hot and cold climates. I also had both a hard top and soft top with no top on at all throughout Summer.

Full doors...windows roll down, keep out the elements better, can't cut the window, window won't turn yellow.
Half doors...colder, can cut window to brake in, window zips.
Buy full doors and get a set of half doors for the summer

Full doors are much quieter and warmer in the winter . Half doors are easier to take off the window part when you're putting your top down. If you're just cruising around town, use the half doors. If you're traveling or have a decent commute to work or school, go with the full door. It gets deafening with a half door. Full doors look stupid with the top down too. Hope this helped.

Half door
Pro: you may be able to feel the wind every sunny day
Con: What about rainy days and if a thief is looking for a
Wrangler with half doors so it'd be easier to steal.
Full door
Pro : Protects you against thieves
Con: You can not feel the full blast of wind on sunny days
