Both are excellent midsize cars, and you can not go wrong with either. I do propose that you go for a test drive and attempt both out, and see which do you favor. Myself, I like having a trunk, so as much as I like the Prius I would not purchase a new one because it's a hatchback.
If you just want interior size, I'd say the Camry hybrid. The Prius is bigger on the inside than it seems from the outside, but still does not quite match the Camry.
For fuel economy and initial buy price, I'd tell go with the Prius.
The Camry hybrid is pretty comparable to the Camry XLE top of the line trim level . Base MSRP for the Toyota Camry hybrid is $25,200.

Interior Dimensions front/rear :
Headroom without moonroof: 38.8/37.8
Headroom with moonroof: 37.9/37.4
Shoulder room: 57.8/56.7
Hip room: 54.6/53.9
Leg room: 41.6/38.3
Seating Capacity: 5
EPA Passenger volume: 101.4 cu. ft.
Luggage capacity, rear seatbacks up: 10.6 cu. ft.
fuel tank: 17.2 gallons regular unleaded
EPA fuel economy: 33 MPG city, 34 MPG highway, 34 MPG combined
The Camry hybrid tends to average about 10% of total Camry sales in the US, using monthly numbers from pressroom.toyota.com. The Camry hybrid looks alike to the regular Camry, so you will not stick out.
For the Toyota Prius, Base MSRP starting at $20950:

Hip room: 51.0/51.6

EPA Passenger volume: 96.2 cu. ft.
Luggage capacity: 14.4 cu. ft.
Fuel tank: 11.9 gallons regular unleaded
EPA fuel economy: 48 MPG city, 45 MPG highway, 46 MPG combined
For both, I'd propose using the "Build and Price your X" link on the left of the toyota.com web site, and fill in your ZIP code to see the MSRP pricing and available choice packages in your area. they are both still rather in demand cars, so don't pay more than MSRP, but since they are both available off the lot now, you may want to be able to find a dealership with one for sale no lines at MSRP or offering one for below MSRP.
Do note that if you buy either hybrid on/before Sept. 31, 2007, you can be qualified for a US Federal earning tax credit $650 for the Camry Hybrid, $787.50 for the Prius, but can be less if you hit AMT . purchases on/after Oct. 1, 2007 don't meet the criteria . decide quickly.

So, the Prius has more front headroom than the Camry hybrid, and more luggage room, but the Camry hybrid has more interior passenger volume like more hip, shoulder, and leg room and rear headroom . The Camry hybrid has lower fuel economy but it has a bigger fuel tank for a alike range as the Prius . Base cost is cheaper for the Prius, but if you add alternatives alike to what is found on the Camry Hybrid, it'll most likely all be a wash in pricing.

I have the non hybrid Camry and love the car. I'd recommend the Camry. it is more spacious than a Prius.

I've linked a comparison of the two cars below. The Camry hybrid goes for over $26k while the Prius goes for just over $22k. also, the Prius gets far better gas mileage, so you will save more money over time.
In terms of spaciousness, I could think that the Prius is better because of its hatchback design. I can fit two bicycles in my Prius with the back seats down. nearly everybody who's ridden in the car commented on how spacious and comfy it's.
Additonally, the Prius has been named the greenest car on the planet:

and accounts for 47% of all US hybrid sales, three times as many as the Camry hybrid
greencarcongress.com/2007/02/us_hybrid_sales.htmlgreencarcongress.com/2007/02/us_hybrid_sales.html">greencarcongress.com/2007/02/.
Go with the Prius. you will be happy you did.

I own a Camry Hybrid and test drove a Prius. I noted the following:
Camry Benefits Over Prius
Stronger acceleration.
Engine is quieter and smoother.
Ride is a bit more lavish.
More passenger room.
Comes standard with most of the XLE trim package alternatives like: auto, dual zone weather control, Premium JBL sound system with eight speakers.
Comes standard with the VDIM stability system just a combo of Anti Lock, stability control, and anti slip on accel . I am not certain if Prius has some or all of this VDIM system but.
I personally favor the looks of the Camry over the Prius.
Prius Benefits Over Camry
Costs between $3000 to $5000 less.
Gets better mileage I avg 41 in the Camry, 54 in the Prius .
The transition from EV mode to gas mode is a little smoother than on the Camry.
More room for cargo in the trunk. The Corolla has more trunk space than the Camry I use my girlfriends Corolla all the time when purchasing big things .
Prius comes standard with a MUCH nicer power handling screen Full color, nav screen sized than the Camry.
Qualifies more frequently for HOV lane access.
Of course, this is only my opinion. YMMV.
