210 is about normal for a high perf. engine.Timing can be a little to far advanced.Check vacuum advance for correct function with a vacuum pump.Check for vacuum hose leaks.

does it have a thermostat? if so, what temp? it may be a 160 degree, or a 190 degree if that's what you have....if you are running with no thermostat at all, you are temp will variate based on how many cores you are radiator has . how many blades are on you are fan and so on....

210 isn't bad. you'll have to keep a close eye on it. You could attempt a 160 thermostat. that is what I run in my 350. It runs about anywhere between 160 to 190. based on the outside temp.. Also you be sure your coolant is 50% water.
Water disapates heat better than antifreese. They have an additive called "water wetter" that clams it'll drop your engine temp 20 deg's. when added to your coolant.
